A Bite of Chicago
BAKIT Box: How a Chicago startup founded by two minority women saved my Thanksgiving
My Maple Pumpkin Pie BAKIT Box arrived just in the nick of time for Thanksgiving. I am not a baker but I had promise to bring dessert to our annual Thanksgiving gathering.
I was beginning to panic.
Locally many of Chicago’s popular pie vendors had already stopped taking orders. And somehow the pumpkin pie on sale at the Jewel would never cut it with my family.
I knew I needed something impressive and that I had to make it from scratch.
Thanks to Carla Medina Jacobson and Shelley Gupta, founders of the Chicago-based BAKIT Box and graduates of University of Chicago Booth School of Business their all-inclusive kit saved my Thanksgiving dilemma.
The Founders
Their Maple Pumpkin Pie kit contained everything I needed to make a decadent homemade pie.
It contained pre-measured ingredients including maple syrup, evaporated milk, nutmeg, cloves, cinnamon, pumpkin and a pie crust.
The instructions were easy to follow. All I needed was a bowl, a whisk, 1/2 tsp of salt, 3 eggs and a 9-inch pie tin.
The BAKIT Box startup, founded early in the pandemic, makes baking kits for a variety of recipes from cookies and croissants to empanadas and pies.
BāKIT Box allows you to create delicious homemade recipes without worrying about whether or not seasonal ingredients like canned pumpkin and pie crusts are sold out at the grocery store.
It also saves time and messy cleanup.

BARBARA REVSINE
I started writing when I was in grade school. And when I wasn’t writing or thinking about writing, I was reading what someone else had written. So it wasn’t a stretch for me to think about writing as a career. Neither was it a stretch to think about writing about food, a subject I’d always found interesting, more in terms of history, cooking, restaurants and culture than eating and critiquing. Decades after selling my first story, my interest in writing about food continues, and “A Bite of Chicago” gives me another opportunity to pursue my passion with people who share it.
